Quick Chicken Tikka Masala

July 30 - I felt pretty lazy today and I knew that Brenda had bought premade tikka masala, so I thought it’d be a good call to make a really quick chicken tikka masala. This is a perfect weeknight meal because with the sauce already made, this recipe is so easy. I decided to use a recipe from Patak’s website, which includes their version of sauce, but I used a jar by Maya Kaimal. The brand really just depends on preference, and when I go back to school, I think I’d like to try out a few different brands to find which one I like best.


Before any cooking, I sliced shallots, cut cherry tomatoes into quarters and diced chicken. These are really the only things you have to do to prepare for this dish, which was perfect for the lazy mood I was in. I heated vegetable oil in a pan and added the shallots to soften. Next came the chicken, which is supposed to sit for a few minutes in order to cook enough before adding the sauce and tomatoes. Once the chicken was white enough to my liking, I added both the tomatoes and the entire jar of sauce, stirred a bit, and then covered the pan. It’s left like that for about 15 minutes, with an occasional check and stir. Once I felt like the chicken was cooked, I added a pinch of salt, some coriander and half a lemon’s worth of juice to add more flavor.


I served the chicken tikka masala over basmati rice and with steamed cauliflower. It was really good especially considering how easy it was, but I think the sauce could’ve had more spice, or flavor in general, to it. Next time I make this, I’d love to try to make my own sauce from scratch, and maybe some other sauces to go along with some naan. However, the premade sauce is still good and makes the dish so much quicker to make. So, I think it’s perfect for a post-work weeknight at home or for a college student like me who wants a good dinner but doesn’t have much time.
